Bread Pudding (Broodpoeding)

A baked pudding in just one hour. The recipe itself is very simple and quick to put together.

Ingredients

  • 1 cup soaked white bread that has had all the water squeezed out of it
  • 1 cup sugar
  • 3 eggs
  • 1 cup dessicated coconut
  • 2 cups milk
  • 2 tablespoons butter
  • apricot jam

Method

Mix butter and sugar, add eggs to this mixture and then all the other ingredients. Pour into baking dish and add small pieces of apricot jam to the top. Bake for 1 hour at 160C.

  3. Talk about comfort food! I love the combination of coconut and apricot flavors you’ve used for this homey, excellent pudding. A few bites, and all would seem better with this crazy world of ours.
