
This delicious pie is quick and easy to make. In this particular version I used tinned asparagus. This is yet another old recipe that I have had laying around for a long time. The original author is unknown.
Ingredients
Tart Dough
- 1 ¼ cups cake flour
- 6 tablespoons butter
- 1 large egg
- 1 teaspoon baking powder
- pinch of salt
Filling
- 1 tin asparagus
- 2 eggs
- ½ cup milk
- 250 gram cheddar cheese
- ¼ teaspoon dry mustard powder
- 1 teaspoon baking powder
Method
Tart Dough
Mix all the ingredients and roll out the dough a few times. Cover the bottom of a 9″ pie dish.
Filling
Drain the asparagus and place pieces in the pie dish. Whisk eggs and add the rest of the ingredients to this mixture. Pour over the asparagus and bake for 20 minutes at 180C.

This looks very delicious. Is there any other vegetable that I can substitute for the asparagus? Peas? Sweet Corn?
@MaryMoh – Because of the relatively short cooking time involved here you could use other vegetables but I do suppose it would have to be tinned vegetables or any other pre-cooked vegetables. I have made this recipe before with tinned sweet corn and it was delicious.
