Rooibos tea is a locally grown tea that is supposed to be very healthy for one. The tea has a high level of antioxidants and it is caffeine-free. I do not know if all this is true, I like the tea because it tastes great. These days this tea is available virtually all over the world and it normally sold as tea-bags.
Ingredients
- 3 Rooibos tea bags
- ½ lemon (sliced)
- 6 to 8 mint leaves (rinsed off)
- sugar to taste (you can leave this out should you prefer)
- 2 liters boiling water
Method
Place tea-bags, lemon, sugar and mint leaves in a fairly large pot and pour boiling water over this. Stir the mixture every now and then until cooled. Remove the tea-bags and refrigerate. Serve ice cold.
Happy eating!

Great recipe. Try making a Rooibos punch. Mix chilled Rooibos, Orange Juice, Club Soda or Lemon Lime Pop and Mint leaves.
@Amber – Your recipe sounds delicious. A soon as the summer rolls around again I will give it a try. Thanks.
I love lemon tea. We used to drink it iced back home in Malaysia. But here I always drink it hot as it’s very cold. I must add mint leaves too. I’m sure it makes it even more refreshing.
@MaryMoh – I am sure this exact recipe will work if served hot as well, I am just not that sure about the mint leaves.
I was virtually weaned on sweet, very strong iced tea, the traditional summertime drink where I live in the Southern US. I still haven’t found a reliable, local source of rooibos here – nuts! – and will try internet-based sources.
@Barbara – I am holding thumbs that you will find some online source.
I make this often in the summer months – it’s so refreshing!
@Marisa – Thanks, now I have someone to support my claim.
Now this would be great today….it is so hot and sticky out that this would be most refreshing.
It is extremely easy to make if you the rooibos tea. Thanks for the visit.
