Brown Pudding (Bruinpoeding)

There are quite a few modern variations of this very old recipe. Most of the new recipes require you to add a sauce to the pudding after it has been baked. The original does not. In the original recipe the pudding is baked in the sauce. This can become a problem as the sauce does tend to boil over during the baking process and this is most probably why the modern versions have done things differently.

On Ba-Bootie I try to stick to the old fashioned way so here is the recipe of the oldest version of this pudding that I could find. The person who very graciously gave me the recipe does not want their name mentioned. I hope my attempt at the recipe lives up to this person’s expectations.

Ingredients

  • 2 tablespoons golden syrup
  • 2 tablespoons melted butter
  • 1/2 cup sugar
  • 1 cup cake flour
  • 1 egg
  • 1 cup milk with a heaped teaspoon of bicarbonate of soda mixed into it

Method

Mix the golden syrup, butter, sugar and egg. Add milk with bicarbonate of soda to this mixture. Add the flour and mix well. The mixture is supposed to be runny. Pour mixture into a deep greased oven dish. If this dish is not deep enough the pudding is going to boil over.

Mix 1 cup sugar with 1 1/2 cup boiling water. Stir until the sugar is melted. Pour this syrup over the pudding mixture. Place a lid on your oven dish and bake at 160C for 45 minutes.

  8. When we were kids growing up my grandmother used to make a version of this. It was our favourite – she made a couple of other puddings which were, in truth, not great – but this we loved. And we used to call it Nana’s “Sticky Bottom” Pudding, which to our young minds was hilarious. Thanks for sharing your version, which I am going to try and think of my Nana with her sticky bottom!
