Meat Dishes, Pasta Dishes, Chicken and Mushroom Lasagna

Chicken is very popular in my household. This recipe allows one to serve chicken in a different way from the run-of-the-mill meals. This meal I have prepared quite a few times and the recipe is actually something that I have arrived at via trial and error.

Ingredients

  • 1 tin Creamed Mushrooms
  • 1 packet Lasagna
  • 1 Onion
  • 2 Garlic cloves
  • half a teaspoon Barbecue spice
  • 1 packet fresh Button Mushrooms
  • 6 Chicken Breasts
  • Cooking Oil
  • 1 teaspoon Salt
Cheese Sauce
  • 100g Cheddar Cheese (grated)
  • 3 tablespoons Cake Flour
  • 3 tablespoons Butter
  • 1 teaspoon Salt
  • 1 teaspoon Mustard Powder
  • half a teaspoon Pepper
  • 1 and a half cup Warm Milk

Method

Cheese Sauce

Mix melted butter with cake flour. Add warm milk slowly stirring continuously until mixture is thick and creamy. Add salt, pepper, mustard powder and grated cheese.

Lasagna

Add salt and barbecue spice to chicken and cook until soft. Cut cooked chicken into little blocks. Slice onion, garlic and button mushrooms. Fry all these in cooking oil until soft. Drain oil from fried mixture and add cooked chicken. Cook all this for a further 5 minutes. Lastly add the creamed mushrooms. Pack layers of lasagna and chicken mixture in a greased oven dish. Add cheese sauce to the top of the last layer. Bake for 30 minutes at 180C.
