
This is a recipe that is made at least once every two weeks in my household. This light meal is equally delicious served hot or cold. This is one of those where left-overs is never a problem. The recipe itself is from one of my files, the original author is unknown.
Ingredients
- 250g macaroni (cooked)
- 60ml butter
- 60ml cake flour
- 2 and a quarter cups of warm milk
- 200g cheddar cheese (grated)
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon mustard powder
- half a cup breadcrumbs
- 1 small onion, 1 small green pepper, 1 packet bacon (250g) and 1 clove garlic (everything chopped and browned in oil)
Method
Pre-heat oven to 180C. Grease an oven dish. Melt butter in pot and add cake flour. Stir until mixture is nice and creamy. Add warm milk slowly to mixture and stir continuously. Allow mixture to simmer for 3 minutes until mixture thickens. Remove sauce from heat and add half the cheese, salt, pepper, and mustard (stir until the cheese has melted). Add cooked macaroni to the oven dish and stir in the bacon, green pepper, onion mixture. Now pour the white sauce over everything. Sprinkle the rest of the cheese over the top and then sprinkle the bread crumbs right on the top. Bake for 30 minutes or until golden brown on the top. Serve with a green salad of your choice.
