Pineapple Fridge Tart

Tarts, Pineapple Fridge Tart

The type of fruit used here as well as the jelly flavour can be substituted with any of your choice. This makes this recipe pretty versatile. This recipe was passed on to me by a friend, thanks Alta.

Ingredients

  • 1 packet Tennis Biscuits
  • 2 ml sherry (half a teaspoon) (I substituted this with a few drops of brandy)
  • 250 ml boiling water (1 cup)
  • 440 gr tinned crushed pineapples (1 tin)
  • 125 ml apricot jam (half a cup)
  • 1 packet lemon jelly
  • 1 tin condensed milk
  • whipped cream

Method

Smear jam on biscuits and place two biscuits on top of one another. Place a layer of these at the bottom of a tart dish. Sprinkle sherry over the biscuits. Dissolve jelly in boiling water and add condensed milk and pineapple. Pour this mixture over the biscuits and allow it too cool. Decorate the tart with whipped cream and pieces of fruit should you want to. Allow the tart to set properly in the refrigerator before serving.

    It is easy. If you really like pineapple you can add some pieces to the top of the pie to give it that extra zingy taste.

    My mother made something similar to this, but used Ideal Milk instead of Condensed milk. The Ideal milk must be left in the fridge overnight. It gives a light and fluffy texture

    Substituting the cream with ideal milk is a great idea, the texture should be a lot lighter. I will definitely keep this in mind for the next time. By the way, I have another fridge tart recipe on the way.

    Wonderlik! Al my gunsteling Suid-Afrikaanse kosse so op een werf!

    My moeder (nou 80 jaar oud) maak die pynappeltert deur die Tennisbeskuitjies in lae te pak met die kondensmelk/suurlemoensap/pynappel mengsel.

    Ek kan van kleintyd onthou dat ek die kondensmelk en suurlemoensap presies 20 minute met ‘n handklitser moes klits, maar die eindresultaat was altyd die moeite werd.
