Fish Dishes, Sardine Curry

Tinned sardines are one of the foods that is often overlooked or considered to be something beneath our social standing. This tasty treat is actually very versatile and can be used for so many things. This little recipe is but one of the ways in which we can use these handy little tins. My Mom used this one often and it most certainly brings back some great memories. I hope you can find a use for this recipe.

Ingredients

  • 1 tin sardines (plain pilchards will also do)
  • 1 thick slice of bread (soaked in milk)
  • 2 big onions
  • 1 egg
  • 2 teaspoons curry powder
  • 2 tablespoons vinegar
  • 1 tablespoon sugar
  • salt and pepper

Method

Brown the onions. Add the fish (with sauce), bread and egg. Mix curry, sugar, vinegar, salt and pepper and add to fish mixture. Cook for 1-2 minutes. Serve on rice or as a topping for a sandwich. If your children are anything like mine you might have to remove the little spine from each individual sardine before you attempt this recipe.
