Oxtail

Meat Dishes, Oxtail

Good things come to those who are prepared to wait. This is definitely true for this dish. It does take a while to prepare, but boy, is it worth the wait.

Ingredients

  • 1 oxtail, flour, salt and pepper
  • 4 small onions
  • 4 tablespoons fresh mint leaves
  • 4 small carrots (sliced)
  • 1 green pepper (sliced)
  • 4 tablespoons cooking oil
  • 4 cloves
  • .75 liter water
  • 1 block beef extract
  • half cup red wine

Method

Cut oxtail into portions and boil in water for about 10 minutes. Dry off the meat and cover with the flour, salt and pepper. Heat oil in a saucepan and brown the pieces of meat. Drain off excess oil and add cloves, mint, carrots and green pepper. Add the water, beef extract and wine. Put the lid on the saucepan and cook slowly for 2 to 3 hours or until meat is soft. Add onions after 2 hours of cooking.

    Arnold, nog nooit in my lewe 1 beese-stert gaargemaak nie, maar darem al 30in `n pot gehad, met sak artappels, sak uie, kas tamaties ens. Wat ek van jou resep hou is die laat ingooi van die uie wat sorg dat mens darem nog die uie kan sien en kan proe!
    Persoonlik, 1/2 uie in begin met braai en res baie later.Skep ook graag eerste stock af en voeg by op einde.
